Growing up, we always had roast on Sundays. We went to church and had the roast cooking in the timed oven. Roast definitely became comfort food in our home. Now with the Instant Pot (electric pressure cooker), we can still have our Sunday dinner but in a fraction of the time it took for my mother and grandmother. Here's my favorite Sirloin tip roast in the Instant pot.

If you have other preferred cuts of meat like boneless chuck roast, round roast, blade roast or even shoulder roast, this is a great recipe for them also.

My grocery stores many times will put rump roast on sale, so many times that is what I substitute for sirloin tip roast

The instant pot is so remarkable to take tough meat and magically turn it into tender meat. Thus, if you find a sale on a roast that is of a tough cut, it will all work out fine.

Ingredients

  • ½ tablespoon olive oil
  • 3-4 pound sirloin tip roast or meat cut of your choice
  • 1 teaspoon Kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 tablespoon garlic powder
  • ¼ cup prepared horseradish
  • 4 cups beef stock or beef broth
  • 3 pounds baby potatoes or quartered larger ones (red potatoes or Yukon gold work best)
  • 1 pound baby carrots

How to make sirloin roast in your Instant pot

First thing to have a tender sirloin tip pot roast

Sear your roast in the bottom of the pot (Helps create tender meat)

  • First turn your pressure cooker to Sauté function and pour in a little olive oil in the bottom of the instant pot
  • Wait until your pressure cooker is medium heat to high heat
  • Sear your sirloin tip roast (or whatever cut of meat you bought) for a couple of minutes per side or until browned. (typically 3-4 minutes each side)
  • Scrape up any brown bits on the bottom of your pot, so that pressure can build appropriately. It also keeps your machine from giving you a burn alert if your machine does that.

Step 2:

Add beef broth and seasonings. Make sure you spread on top of the meat covering all your meat

Step 3:

Cooking time is 20 minutes per pound. My Instant pot has a meat setting but if yours doesn't use high pressure. Make sure and lock lid in place per your instant pot instructions

Step 4:

Let your Instant pot natural release for 10 minutes

If you aren't adding baby potatoes and baby carrots, there is a longer cook time but if you are wanting to add vegetables for a hearty meal simply follow the instructions below.

 Vegetables and Potatoes with your Sirloin tip roast

Cook time for vegetables and potatoes is to cook your roast 20 minutes less than indicated above. Let naturally release for 10 minutes and then add in your potatoes and carrots and cook on high for 15 minutes. Do a quick release and serve.

Don't be surprised if people tell you this is the best pot roast they have had. You can tell them you slaved in the kitchen all day and not that this is an easy recipe. It will be our little secret.

While your vegetables and potatoes are finishing, don't forget to grab your serving platter and your knife so you will be ready to slice meat after the pot roast cooks completely. You can also use a meat thermometer if you want to make sure your pot roast is cooked to a safe temperature.

To make a rich gravy to pour over your roast:

Gravy for your sirloin tip roast:

  •  6 tablespoons butter
  •  1/2 cup all-purpose flour
  •  3 to 4 cups juices/drippings from roast (remaining ingredients in bottom of Instant pot)

If you want to make your gravy in your instant pot, add your butter and flour. You can add cold water to make enough liquid or add more flour if you have more liquid than 3-4 cups.

If your machine cools down quickly, you can put your machine on a low setting. You simply want to fix everything until it creates the gravy the texture your family loves. Gravy in my opinion makes the perfect pot roast.

The next time you want sirloin tip roast, take your favorite specific cut of meat, add easy ingredients and create the best pot roast recipe using your instant pot. It doesn't take a long time and creates a complete meal when you add potatoes, baby carrots and gravy.
